  1. Use a small food processor or blender to blend together the cooked, mashed sweet potato (1 cup), egg, and ¼ tsp salt until no lumps remain.
  2. Place in a large bowl.
  3. Add 2 cups of flour.
  4. Mix dough together until a sticky consistency.
  5. Knead the dough until smooth, adding additional flour as necessary so that the dough is no longer sticky. The amount of flour will depend on the humidity of the day and the size of your egg.
  6. Bring a large pot of salted water to a boil.
  7. Cut the dough into 8 even pieces.
  8. Cover the dough with a damp towel and work with one piece at a time.
