- Cook the whole grain rotini in a large pot of boiling salted water until al dente, 8 to 10 minutes, then drain.
- Pan fry the chicken breast in a large pan until cooked through.
- Remove from pan.
- In the same pan, over medium heat, add the olive oil, onions and garlic.
- Sauté until softened.
- Add in the mushrooms.
- Cook until softened and lightly golden.
- Add in the butter and flour.
- Stir to coat.
- Allow to cook for a couple minutes to cook out the raw flour flavor.
- Add in the chicken broth.
- Stir until smooth.
- Simmer for a few minutes until slightly thickened.
- Add in the cooked chicken.
- Stir to coat.
- Lower the heat to low.
- Add in the sour cream.
- Cook just until warmed through.
- Pour over prepared noodles.
- Garnish with sliced scallions.
