Ingredients

  • 2½ cups dried black beans
  • 3 red bell peppers
  • 2 red onions
  • 4½ cups vegetable broth
  • 1½ cups water
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 lime
  • 2 oz cheddar cheese
  • 1 tbsp canola oil
  • hot sauce
  • 1 bag tortilla chips

Method

  1. Dice the red onion.
  2. Heat your Instant Pot on saute mode.
  3. Add a tablespoon of canola oil.
  4. Once hot, add the diced red onion.
  5. Saute for 2-3 minutes.
  6. Next, add the diced red pepper and spices to the Instant Pot.
  7. Saute for an additional 1-2 minutes.
  8. Add the dried black beans to the pot along with the vegetable broth and water.
  9. Stir well.
  10. Cover and seal the Instant Pot.
  11. Cook on manual, high pressure, for 30 minutes.
  12. Allow the pressure to release naturally.
  13. Once you are able to open the lid, blend the soup with an immersion blender.
  14. Add juice from 1 lime.
  15. Taste and adjust seasoning/spiciness as needed.
  16. Serve with shredded cheddar cheese and tortilla chips.
