Method
- Dice the red onion.
- Heat your Instant Pot on saute mode.
- Add a tablespoon of canola oil.
- Once hot, add the diced red onion.
- Saute for 2-3 minutes.
- Next, add the diced red pepper and spices to the Instant Pot.
- Saute for an additional 1-2 minutes.
- Add the dried black beans to the pot along with the vegetable broth and water.
- Stir well.
