  • 1½ lb ground beef
  • ¾ cup milk
  • 2 eggs
  • 1½ tsp salt
  • 1 tsp pepper
  • ½ tsp oregano
  • 1 small onion
  • ½ cup bell pepper
  • ¾ cup saltine crackers
  • 1½ cups water
  • 1 cup ketchup
  • ½ cup brown sugar
  • 1 tbsp worcestershire sauce

  1. In a medium sized mixing bowl combine ground beef, egg, milk, seasoning, crackers, onion, and bell pepper.
  2. Place a piece of foil on a flat surface and loosely form a loaf. Shape the foil around the loaf to stabilize, and place a second piece of foil around to hold it securely into place.
  3. Add 1 1/2 cup of water to the bottom of the Instant Pot.
  4. Place the trivet into the bottom. Carefully add the loaf to the top of the trivet. Secore the lid of the Instant Pot and make sure the vent is set to seal. Manually cook for 28 minutes.
  5. Allow the Instant Pot to naturally realease for 10 minutes, and then carefully perform a manual release. Carefully remove the meatloaf from the Instant Pot to a baking sheet.
  6. Heat the oven to broil.
  7. Combine the ketchup, brown sugar, and Worcestershire sauce.
  8. Brush the ketchup glaze onto the top of the meatloaf.
  9. Place in the oven for two minutes, carefully watching to make sure the glaze doesn't brown or burn.
  10. Remove the meatloaf from the oven and allow it to sit for 10 minutes before removing the foil and slicing the meatloaf to serve.
