Ingredients

  • ¾ pound beef, whole intact cut (not ground or mechanically tenderized)
  • 1 japanese cucumber
  • 7 ounces daikon
  • 2 teaspoons ginger
  • 5 cloves garlic
  • 1 lemon
  • shiso leaves
  • soy sauce
  • 2 stalks scallions

Method

  1. Heat grid well.
  2. Place beef on grid.
  3. Grill on all sides.
  4. When the surface turns light brown, dip in ice water for a few seconds.
  5. Dry with a cloth, wrap in Saran Wrap.
  6. Place in the refrigerator.
  7. Prepare condiments.
  8. Cut lemon into 8 wedges.
  9. Pare daikon in paper thin sheets, cutting with bottom part of knife while rotating the daikon.
  10. Roll daikon sheet.
  11. Slice thinly crosswise, thus making very thin and long strips. Do the same with cucumber.
  12. Cut beef into thin slices.
  13. Place daikon strip, cucumber and beef slices in a serving dish.
  14. Put other condiments on the side.
  15. Place scallions on beef.
  16. Pour soy sauce into small individual serving dishes.
  17. Add condiments to taste. The beef is dipped lightly in the soy sauce.
