  1. Heat the oven to 375°F.
  2. Butter a 3-quart casserole dish; set aside.
  3. Place bread pieces in a medium bowl.

  12. Slowly pour hot milk into flour-butter mixture while whisking. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick.
  13. Remove the pan from the heat.
  14. Stir in salt, nutmeg, black pepper, cayenne pepper, 3 cups cheddar, and 1½ cups Gruyere.
  15. Set cheese sauce aside.
  16. Fill a large saucepan with water.
  17. Bring to a boil.
  18. Add macaroni.

  24. Bake until browned on top, about 30 minutes.
  25. Transfer dish to a wire rack to cool for 5 minutes; serve.
