  1. Heat the oil in a 4-quart saucepan over medium heat.
  2. Add the carrots and onions and cook, stirring occasionally, until tender-crisp.
  3. Add the chipotle peppers and cook, stirring, for 1 minute.

  5. Heat to a boil, then reduce the heat to low.
  6. Cook for 25 minutes.
