  1. Combine the lemon juice and ½ cup of the olive oil.
  2. Bring a large pot of salted water to a boil over high heat.
  3. Pour in the orzo and cook until al dente.
  4. Drain the pasta and pour it into a large serving bowl.
  5. Immediately add the lemon juice and olive oil mixture and stir well.
  6. Heat a large skillet over medium-high heat.
  7. Add 1 tablespoon of the olive oil.
  8. Add the shrimp, salt, and pepper.
  9. Cook for about 2 minutes, or until the shrimp are just done.
  10. Add the shrimp, green onions, parsley, and feta to the orzo mixture.
  11. Stir well.
  12. Let the orzo sit for 1 hour. If you make it earlier in the day, cover and refrigerate, then bring to room temperature before serving.
  13. Just before serving, add the basil and gently mix.
  14. If desired, serve over a bed of spinach or lettuce.
