  • 1 tbsp ancho chili powder
  • 1 avocado
  • 1 handful cherry tomatoes
  • 1 bunch cilantro leaves
  • 1 lb fish fillets
  • 1 corn
  • 1 jalapeno pepper
  • 3 limes
  • ¼ onion
  • ½ tbsp red pepper flakes
  • 1½ heads romaine lettuce
  • salsa
  • salt and pepper
  • 1 tortilla
  • ¼ cup vegetable oil

  1. Place fish in glass container.
  2. In a small bowl, combine all of the marinade ingredients (vegetable oil, red pepper flakes, juice of 1 lime, ancho chili powder, salt, and pepper).
  3. Pour over fish.
  4. Gently toss fish to cover both sides.
  5. Put aside to marinate for 15 minutes.
  6. Preheat grill to medium-high heat.
  7. In large frying pan, add oil to ½" depth.
  8. Heat over medium-high heat.
  9. Working in batches, add a few tortilla strips at a time.
  10. Fry until golden, about 1 minute.
  11. Drain on paper towel lined plate.
  12. Sprinkle with a little salt.
  13. Place a piece of tin foil on to the grill.
  14. Add fish.
  15. Cook about 4 minutes per side, or until flakes easily.
  16. On large plates or bowls, assemble your salad.
  17. Start with lettuce on bottom, add tomatoes and onions, then corn.
  18. Put a piece of fish on top with a dollop of fresh salsa.
  19. Drizzle with dressing.
  20. Add a few tortilla strips to the plate.
  21. Serve with avocado lime dressing (puree 1 avocado with juice of 2 limes, 1 jalapeno pepper, and a bunch of cilantro).
