Ingredients

  • 6 fillets anchovy
  • 4 slices country bread
  • ½ cup basil leaves
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • ½ cup onion
  • 1 tablespoon tomato paste
  • 1 pound tomatoes
  • 4 pieces fish fillets

Method

  1. Preheat oven to 475 degrees F.
  2. Heat a sauce pan over medium heat.
  3. Add 1 Tb. of oil, onions and anchovies.
  4. Saute for 2 minutes.
  5. Add the garlic, tomatoes and tomato paste.
  6. Salt and pepper to taste.
  7. Bring to a boil.
  8. Reduce heat to a simmer.
  9. Simmer 10-15 minutes.
  10. Meanwhile, pat the fish with a paper towel.
  11. Then lightly oil, salt and pepper on both sides.
  12. Roast on a rimmed baking sheet for 6-8 minutes--depending on the thickness of the fish.
  13. Brush the bread with olive oil.
  14. Toast in the oven for 3-5 minutes.
  15. You could put them on a lower rack with the fish to save time!
  16. Stack the basil leaves.
  17. Roll them into a tight cylinder.
  18. Slice them thin into fine ribbons.
  19. To assemble the bruschetta, top bread with a fish fillets.
  20. Add tomato sauce.
  21. Sprinkle fresh basil ribbons.
  22. Serve immediately.
