Ingredients

  • ½ cup roasted almonds

  • 1 small head cauliflower

  • 4 cloves garlic

  • ⅓ cup orange juice
  • ¼ cup pecorino romano cheese

  • 2 chicken breasts
  • 2 tablespoons soy sauce
  • 4 cups swiss chard
  • 2 tablespoons butter
  • 1 small onion

Method

  1. In a shallow dish, whisk together the barbecue sauce, orange juice and soy sauce.
  2. Add the chicken breasts.
  3. Toss to fully coat.
  4. Set aside to marinate while you prepare the rest of your ingredients.
  5. Add the cauliflower florets to the bowl of your food processor.
  6. Pulse 5-6 times are until the cauliflower takes on the texture of couscous. Set aside.
  7. Heat the butter in a large sauté pan over medium heat.
  8. Add the onion.
  9. Cook until tender, about 5-6 minutes.
  10. Add the cauliflower, garlic powder and salt and black pepper to taste.
  11. Stir to combine.
  12. Cook for an additional 5 minutes.
  13. Remove from heat and stir in the cheese and cilantro.
  14. Cover and set aside until you are ready to serve.
  15. Preheat your grill or grill pan over medium to medium-high heat.
  16. Grease the grill.
  17. Pour the used marinade into a small saucepan and bring it to a full rolling boil over medium-high heat for 1 minute before using it to baste the chicken.
  18. Add the chicken.
  19. Cook, brushing occasionally with the boiled marinade, until cooked through, about 10-12 minutes. Flip the chicken about halfway through cooking time.
  20. Remove from heat and set aside to rest while you prepare your Swiss chard.
  21. Heat the olive oil in a sauté pan over medium heat.
  22. Add the garlic.
  23. Cook for 1 minutes, until fragrant.
  24. Add the Swiss chard.
  25. Cook, stirring frequently, until wilted and warm.
  26. Season with salt and black pepper.
  27. Assemble your bowls, by layering sliced chicken breast and Swiss chard over a bed of cauliflower couscous.
  28. Sprinkle with almonds and enjoy immediately!
