Method

- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl or large measuring cup, whisk together the milk and egg until blended, about 30 seconds.
- Whisk the oil into the milk mixture until blended, about 15 seconds.
- Pour the milk mixture into the flour mixture.
- Stir just until the batter comes together and no dry flour remains, about 30 seconds; a few small lumps are fine -- do not overmix.
- Heat a griddle or nonstick skillet over medium heat.
- Lightly coat the griddle with nonstick cooking spray.
- Pour ¼ cup of batter onto the hot griddle for each pancake.
- Cook for 1.5 to 2 minutes, until the top is covered with bubbles and the underside is browned.
- Flip each pancake.
- Cook for 1.5 to 2 minutes on the second side, until browned.
- Transfer the pancakes to a plate.
- Lightly re-coat the griddle with nonstick cooking spray between batches.
- Repeat with the remaining batter to make about 8 pancakes total.
- Serve immediately.
