Method

- Pat 4 boneless pork chops (5 oz each) dry with paper towels.
- Lightly coat a large skillet or grill pan with nonstick cooking spray.
- Preheat the skillet over medium heat for 2 to 3 minutes.
- Place the pork chops in the skillet.
- Grill the chops on the first side until browned, about 5 to 7 minutes (up to 11 minutes for a thicker chop).
- Flip the chops.
- Cook the chops on the second side for 5 minutes.
- Insert a meat thermometer into the thickest part of a chop and read the internal temperature.
- Continue cooking, rechecking every 1 to 2 minutes, until the temperature reads 145°F or higher (up to 11 minutes total on this side for an unusually thick chop).
- Transfer the chops to a plate.
- Let the chops rest 3 minutes before serving.
