Method

  1. Pat 4 boneless pork chops (5 oz each) dry with paper towels.
  2. Lightly coat a large skillet or grill pan with nonstick cooking spray.
  3. Preheat the skillet over medium heat for 2 to 3 minutes.
  4. Place the pork chops in the skillet.
  5. Grill the chops on the first side until browned, about 5 to 7 minutes (up to 11 minutes for a thicker chop).
  6. Flip the chops.
  7. Cook the chops on the second side for 5 minutes.
  8. Insert a meat thermometer into the thickest part of a chop and read the internal temperature.
  9. Continue cooking, rechecking every 1 to 2 minutes, until the temperature reads 145°F or higher (up to 11 minutes total on this side for an unusually thick chop).
  10. Transfer the chops to a plate.
  11. Let the chops rest 3 minutes before serving.
